So it’s the second week of school.
We are all decidedly less enthusiastic than we were this time last week. It’s like the reality of the new regime has set in and, for me, that involves having to come up with things to cook for dinner.
Just last week I was so prepared with my meal plan and my pantry full of groceries and now I’m more like “Oh. I have to do that again?” Which I think is also insight into why I tend to get on an exercise kick and then lose momentum. It seems like all that work and effort should buy you some vacation time or something. You know? Like time off for good behavior.
Sadly, that isn’t how it works and so I thought it might be nice if any of you might be so kind as to share a tried and true dinner recipe in the comments today. I realize I can go on Pinterest, but it’s always nice to have a sure winner instead of leftovers I end up throwing away because nobody wants to eat it again.
I’ll start it off. This sausage tortellini skillet from Emily Bites is super easy and my people love it.
