  • Live from Icepocalyspe 2018

    When I was a little girl, I was endlessly fascinated with the episode of Little House on the Prairie when a blizzard suddenly hits Walnut Grove and Miss Beedle had already sent some of the children home from school and Pa and the other men of Walnut Grove had to get out and find them while everyone else hunkered down in the schoolhouse to weather the storm. I have vivid memories of re-enacting this story all by myself and burrowing all the way under my Holly Hobby bedspread to the end of my bed as I pretended that I was Laura Ingalls in a covered wagon, trying to survive a blizzard. Let me add to the bizarreness of this by clarifying that I grew up in Houston, Texas where this scenario had not even a remote possibility of being an actuality. Not to mention that it was 1976, so the closest thing I was ever going to get to a covered wagon was a wood-paneled Plymouth station wagon.

    All that to say that there is a still a little girl inside of me who still gets inordinately excited at the prospect of a winter storm even though I have been duped many times throughout my life by a meteorologist’s dire warning of an ICEPOCALYPSE or an ARCTIC BLAST or a SNOWMAGEDDON that turns out to be nothing more than a thirty-six degree day combined with rain that is indeed very cold, but is just rain. Not ice, not snow, not sleet, not frizzle.

    So when the local weathermen began to talk of a possible “ice event” that could hit San Antonio this week, I was skeptical at best. However, I still channeled Ma Ingalls and drove to HEB to stock up on food and chocolate and, most importantly, wine. I realize Ma Ingalls probably didn’t actually stock up on wine but I promise you it’s only because they didn’t sell it at Olsen Mercantile.

    Then on Monday afternoon, it was announced that school would be cancelled on Tuesday due to the icy weather forecast. As excited as I was for a three day weekend to turn into a four day weekend, I still thought it felt weird for an ice day to be announced when it was 72 degrees outside and I’d just picked Caroline up from soccer practice where she was wearing shorts and a t-shirt.

    But, let me tell you, it’s lucky that they made that call because I woke up this morning to this sight.

    That, my friends, is a lone icicle hanging off the gutter of our back porch. Obviously, it was like we had just found ourselves in the very middle of the famous blizzard episode of Little House on the Prairie. It was terrifying but we will rebuild.

    I will say we did get some freezing rain and even a few snow flurries before the day was over and we were all thrilled to have an extra day to just relax and hang out. Apparently my survival instincts kicked in because I consumed approximately 10,654 calories because I decided it was the perfect weather for crawfish étouffée and mini molten lava chocolate cakes. This is what happens when you spend an entire day in your Gap pajama leggings and an oversized sweatshirt.

    So I thought I’d share my recipe for crawfish étouffée. I’ve shared it before but I looked back and realized that was eleven years ago and there’s a good chance some of you missed it. So here you go.

    Crawfish Étouffée

    1/4 c. diced celery
    1/4 c. diced onion
    1/4 c. diced bell pepper
    1 tsp. cayenne pepper
    1 tsp. salt
    1/2 tsp. dried basil
    1/4 tsp. dried thyme
    1 tsp. black pepper
    5 tbs. vegetable oil
    1/2 c. flour
    2 c. chicken stock or canned chicken broth
    1/2 stick butter
    1 bunch green onions, chopped (separate white and green parts)
    1 lb. peeled crawfish tails (defrosted if frozen) – you can substitute shrimp if you prefer
    Hot cooked rice

    In a small bowl, combine celery, onion, and bell pepper. In a separate bowl, combine cayenne, salt, basil, thyme, and black pepper and set aside.

    Make a roux: In a heavy skillet (preferably cast iron), heat the vegetable oil until very hot, then gradually add the flour. Cook over high heat, stirring constantly until it turns chocolate brown. Be careful not to burn it. (Side note: You can make your roux on the stovetop, but I’ve started making mine in the oven and it’s a game changer. Just mix your flour and oil in a dutch oven and cook for about two to three hours in a 350 degree oven. Stir it about every thirty minutes.)

    Take the roux out of the oven and put it on the stove. Add celery, onion, bell pepper to roux. Add seasoning mixture. Let cook 2-3 minutes on low heat, stirring.

    Add chicken stock to roux mixture, stirring until there are no lumps. Continue to simmer until sauce is thickened. In a separate skillet, melt butter, add white part of green onions, and crawfish; sauté 2-3 minutes, then pour it all into the dutch oven with the roux and vegetables. Simmer about 30 minutes.

    Serve with rice and garnish with green part of green onions if desired.

    It is so delicious and even better the next day. I also inadvertently learned a helpful cooking tip today which is if you keep your reading glasses on while you chop onions it keeps your eyes from watering. And with that epiphany, I felt my youth go gently into that good night.

    So that’s what’s been going on around here. I also used this long weekend to watch The Marvelous Mrs. Maisel on Amazon Prime and LOVED IT SO MUCH. It is not family friendly, but it is so funny and so smart and the clothes are to die for. I’m in mourning that it’s over because I need to know what happens next.

    And I’m also watching The Bachelor for the first time in forever. I don’t think I’ve watched it since Sean Lowe’s season, but I got sucked back in by Arie because I remember him from Emily’s season and he’s 36 and I thought he might bring some refreshing maturity to The Bachelor stage. The verdict is still out on that, but the ABC producers are killing it with the dramatic re-enactments and a ramped up kitsch factor. It is so over the top absurd that I am totally here for it. And it’s made even better by reading my friend Lincee’s recaps which you can find here.

  • Fashion Friday: Edition I inadvertently went with a gray theme

    Here’s the good news. First, it’s Friday. And it’s a long weekend. Second, if you came here today wishing you knew where to find a gray sweater, then today is your lucky day. Apparently I am all about a gray sweater in various forms. I didn’t even realize it until I was finished putting this together.

    I mean, there are some exceptions but, for the most part, GRAY.

    Here’s what I found this week:

    Well, this is not gray. I’ve been waiting for it to go on sale and can assure you it’s even prettier in person. Also, I do not care for it over that yellow top that the model is wearing. I’d wear it over all black or even with jeans and white t-shirt.

    3. tie bell sleeve sweater

    Hey! It’s a gray sweater. But look at the darling sleeves. This is 40% and now $35.40. And it also comes in black or lavender.

    This is on sale for 40% and now $35.40. It also comes in navy and white stripe, pink and white stripe, or black, but I’m drawn to this olive green because I think it would look great with jeans.

    Clearly, this isn’t going to be a dress for a large majority of us. But if you’re like me, you’re always on the lookout for longer sweaters or tunics that you can wear with leggings and this fits that criteria. It’s 33% of and now $93.13. It also comes in ivory.

    These make me think of spring and summer. I adore this gingham pattern and they’re on sale for $47.40. They also come in blue denim, light gray or black if that’s more your style.

  • I do not want to learn more about how to make passive income

    If you’ve listened to either of our last two podcasts, then you may already be aware that I have decided my word for 2018 is NO. As in NO THANK YOU, NOPE, and NO MA’AM.

    And I’d kind of wondered if that was me coming from a bad place, a place of ALL I WANT TO DO IS WATCH NETFLIX. But then my dear friend and our worship leader at Community Worship, August, and I were talking last Sunday and without knowing anything about my YEAR OF NO, she said, “I feel like my word this year is UNSUBSCRIBE.” Which is basically just a fancier way of saying no.

    I don’t really know what that means, but I think I’m starting with carefully evaluating the pros and cons of things I commit to, feeling free to remember that no is a complete sentence and that I can determine what I prioritize. It also means that I am literally unsubscribing to just about every email I get in my inbox, including those that are inexplicably addressed to Alfonso and Michael. I don’t know what Alfonso did, but his credit history is apparently very bad.

    But what I’ve noticed as I’ve unsubscribed to emails about health insurance and roofing options and credit offers is that the emails are never-ending. In fact, I feel like unsubscribing is a larger scam that just puts my email on even more lists of people who want to sell me home insulation or car warranties. I don’t even understand.

    I’ve also learned that I what I really resent are the ones with an unsubscribe feature that make me manually type in my email address to unsubscribe. Dear Sir, I did not ask to find out more about your vitamin infused coffee nor how to get a free LASIK consultation, therefore I should not have to take the time to type in my email for you to quit sending me things.

    That really has nothing to do with the five things I’m going to share with you today, but I feel better having told you.

    1. Egg Roll Soup from Gimme Some Oven

    I have several recipes that have become staples that I’ve found from Ali at Gimme Some Oven and this is the newest one. I made this right before Christmas (I made it with ground pork and bought Won Ton Strips at the grocery store.) and it was so delicious and perfect for a cold night. I’m not even a fan of Chinese food and I liked it.

    The bonus is that it couldn’t be easier to make.

    2. Rise – Premieres March 13th on NBC

    Just as I was lamenting that lack of good T.V. shows, I stumbled across this trailer for Rise which is a new show that starts in March on NBC. Here’s what you need to know, it’s produced by the same people who produced Friday Night Lights and Parenthood.

    You know what I have to say about that? Clear eyes, full hearts, can’t lose.

    3. Casco Bay Furniture

    I’ve gotten several emails lately about where I bought our leather couch several years ago. This is it. It’s from Casco Bay Furniture and is exactly like the Maxwell leather sofa at Restoration Hardware but better and half the price. I still love ours and would totally order from them again.

    They have a huge selection of things, offer free shipping and it’s all made in the USA. I know it feels weird to order furniture sight unseen, but I’m so glad I took the chance.

    4. bed prism reading glasses

    One of my favorite people to follow on Instagram is Kristen Bell because she is super funny and doesn’t take herself seriously which are really my favorite two attributes in a person. But she posted an Instastory about these glasses yesterday and it was one of those moments where you just know I AM ABOUT TO BUY THAT THING.

    The official name is bed prism reading glasses, but what they are really LAY DOWN AND READ GLASSES. You can lie flat on your back in bed and use these to read your book without having to be propped up. Lazy Scientists UNITE. These are genius.

    5. Church of the Small Things

    And if you’re looking for a real live hardback book to read, Church of the Small Things is now on sale for just $12.74 at Amazon.     This is our first podcast of 2018 and I am feeling confident we’ll actually break the century mark before the year is over. I know it seems like a lofty goal, but that’s what a new year is all about.

  • This is what it means to be puzzled

    Here are a couple of things I’ve learned in the last day or so.

    First, this blanket is the softest, best blanket ever and will meet all your nap time needs for the winter. What it lacks in beauty, it makes up for in comfort. And that’s saying a lot because the one we have is purple and goes with nothing in our house. I don’t even care.

    Second, if your live Christmas tree quits drinking water out of the stand about two weeks before you actually take it down and you live in Texas, there’s a good possibility that you might inadvertently be creating a mosquito breeding habitat. Ask me how I know.

    Both of these things should be context clues as to all the excitement our weekend held.

    I knew at some point over the weekend that I needed to put away all the Christmas stuff, but I also knew it was going to take a minute for me to muster up the energy. It’s weird how some years I want the tree down and everything put away the day after Christmas and other years I’m like WE LEAVE THE TREE UP UNTIL EPIPHANY to make it appear purposeful and not just that I fell into a sugar cookie coma over the holidays and don’t care that there’s a sad, dead tree in my living room.

    But I knew the tree had quit drinking water sometime around mid-December which meant it was more than time for it to go. So on Saturday afternoon I began the arduous, thankless job of taking the decorations off the tree. That was fairly painless, if joyless. However, the lights were the real challenge. I had painstakingly woven strand after strand in a configuration of illumination that can only be described as “the devil’s loom”. By the time I finally got all the lights off the tree, I looked a little bit like I’d been in a catfight and by catfight I mean a literal fight with a cat and not that Krystle Carrington from Dynasty showed up in my living room.

    And it was as I was wrapping up the lights that I noticed a mosquito flying out of the tree stand. Here’s the thing. I’d noticed over the previous week that there seemed to constantly be a mosquito in our house and wondered how on earth they were getting in and why they were even out considering it was below freezing outside. Well, now I know. I had basically been running a mosquito farm out of my living room. It brings to mind the lesser known Christmas songs, “All I Want for Christmas is the West Nile Virus”, “O Come All Ye Bitten”, and “Away in a Cesspool”.

    Even under normal circumstances, there is something about taking down Christmas that causes me to go into a clean out frenzy, but when you couple that with knowing I’d been unwittingly aiding and abetting ectoparasites…well, that ramped things up to a new level. I spent rest of Saturday cleaning out every inch of the built-in cabinets in our living room, Caroline’s closet and the playroom. I decided there was no need to keep storing seventeen puzzles that are all missing at least one piece or DVDs that we couldn’t play if we wanted to because we no longer own a DVD player. I had an honest talk with myself about all the Christian-living/self-help books I’ve collected over the years and realized that if I haven’t read them by now, then I’m not going to read them. My best self wants to think I’ll spend 2018 reading C.S. Lewis and Dietrich Bonhoeffer, but my worst self says, “Nah, girl, you’re good. Let’s watch something else about the Royal Family on Netflix”.

    And then Caroline’s closet.

    Never mind. I can’t even talk about it.

    When everything was all cleaned out and I had it divided into trash piles and Goodwill piles, I felt a supreme sense of peace and accomplishment. The house was clean (except for our master bathroom cabinets but those are for another time because I am not a machine) and there was only one issue left. The 1000 piece puzzle on our dining room table that was only halfway put together. Caroline and I always do a puzzle over Christmas break, but she had plans with friends and soccer during the break and we never had a chance to finish. I would’ve been content to just let it stay there except when I say dining room table what I mean is that’s our only table and I’m not sure how many more nights we could eat at the coffee table. I looked long and hard at the puzzle and decided I’d come too far to just quit and I’d have to power through and finish it. I’m sure some of you are thinking you would’ve just put the puzzle back in the box and called it a day and to that I say what is it like to be so logical and rational?

    So I spent Saturday evening and most of Sunday afternoon putting the rest of the puzzle together all by myself.

    Please don’t call me a hero. I am but a woman who wanted to reclaim her dining room table.

    And, truthfully, Caroline would’ve probably helped me but she was diagnosed with a mild concussion after soccer practice last week and doing a puzzle probably doesn’t fall under the category of letting her brain rest. But I persisted and finished the puzzle at 5:02 p.m. on Sunday evening and it was totally worth it because when I announced to P and C that I had just put in the last piece, this was basically their reaction.

    They said they were proud, even INSPIRED, by my dedication to finishing a task. It made them both want to be better people.

    Or maybe they said, “What? Did you say something?” while they never looked up from what they were doing. But I feel certain they were giving me the slow, emotional clap on the inside. And that’s what counts.

    Well, that and the fact that our house is now mosquito-free.
